Mooncake

Crust ingredients:

  • 300 gram of flour
  • 150 ml syrup
  • 75 ml peanut oil
  • 1 tsp ash water

Syrup ingredients:

  • 750 ml water
  • 1 kg granulated sugar
  • 1 lemon, squeezed

Stuffed ingredients:

  • 300 ml water
  • 250 gr dried red beans
  • 65 ml MamaKoKo coconut milk
  • 125 gr granulated sugar
  • 2 tbsp butter

How to cook:

  1. To make the syrup, combine all the prepared ingredients, then cook until thickened, and let it cool
  2. Prepare the ingredients to make the mooncake crust
  3. Combine flour with syrup, oil water ash that has been prepared. Stir well and knead until the dough is smooth and does not feel sticky in the hand
  4. Let the dough rest for 3 hours. Cover with a wet napkin over the container used so that the dough does not dry out. Let stand
  5. To make the filling, first boil the red beans until soft, then place them in a saucepan. After that, add the other filling ingredients including MamaKoKo’s coconut milk. Cook and stir continuously until the red beans are incorporated and the dough can be formed into a round shape
  6. Prepare the mold and sprinkle the flour evenly into the mold
  7. Take some of the dough and mold it in the mold
  8. Add the filling to the center of the mooncake. Make sure the entire filling is covered by the dough skin
  9. Prepare the oven. Bake the dough for about 15 minutes until cooked
  10. The mooncake are ready to be served
