Soto Banjar

Main ingredients:

  • 1 free-range chicken
  • 5 cloves
  • 3 star anise flowers
  • 2 cardamom pods
  • 4 tbsp granulated sugar
  • 2 pcs 65ml MamaKoKo coconut cream
  • 1 tsp fried garlic
  • Salt to taste
  • Seasoning broth to taste
  • Water to taste

 

Ground spice ingredients:

  • 250 grams shallots
  • 150 grams of garlic
  • 5 walnuts
  • 1 sheet of dressing leaves
  • Pepper to taste

 

Gravy sauce ingredients:

  • 1 potato, finely mashed
  • 1 hard-boiled duck egg, finely mashed
  • 1 onion, roughly chopped
  • 1 tbsp butter

 

Complementary ingredients:

  • Ketupat to taste
  • Soun noodles to taste
  • Perkedel to taste
  • Orange belly to taste
  • Fried onion to taste
  • Sambal to taste

 

How to make:

  1. Put the mashed potatoes and duck egg into a container, then stir with a spatula until evenly mixed. Set aside when smooth and creamy.
  2. After that, heat some oil in a wok until it boils. Saute the sliced onions in butter until fragrant. Stir occasionally to mix well, then remove from heat and set aside.
  3. Boil the chicken meat that has been cut into several parts until cooked. When done, immediately remove and shred the meat. Season the shredded meat with a pinch of flavoring stock powder.
  4. Next, place the shredded chicken into a steamer pot. Steam for about 15-20 minutes until the marinade is absorbed. Remove immediately and set aside the bones.
  5. Sauté the ground spices until dry and cooked. Add a little oil, then stir and cook again until fragrant. Remove and set aside.
  6. After that, pour enough water into the pancake.
