Besides Mango Sticky Rice, Thailand also has another favorite snack, Khanom Krok, a type of sweet pancake made from rice flour and coconut milk. Let’s try making Khanom Krok with the following recipe!
Main ingredients:
- 140 gr cooked rice
- 140 gr rice flour
- 20 gr granulated sugar
- 1 pcs MamaKoKo coconut milk
- 4 pandan leaves
- 1 tbsp vanilla butter
- 500 ml water
- Salt to taste
Topping ingredients:
- 1 pcs MamaKoKo coconut milk
- 20 gr granulated sugar
- 20 gr rice flour
- Salt to taste
Filling ingredients:
- Taro ponti (steam & cut into small pieces)
- Spring onion to taste
- Corn on the cob to taste
How to cook:
- Combine 140 g cooked rice, 140 g rice flour and 20 g sugar
- Bring to a boil 1 pcs MamaKoKo coconut milk, 1 tbsp vanilla butter, 500 ml water, 4 pandan leaves and salt to taste
- Then blend the above ingredients until smooth. Once smooth beat using a mixer
- Prepare topping 1 pcs MamaKoKo coconut milk, 20 gr rice flour, 20 gr sugar, and salt to taste. Then stir until evenly distributed and store in a measuring cup
- After mixing, cover the main ingredients with a wrap and let it sit for 30 minutes
- After 30 minutes, transfer to a measuring cup
- Prepare a molded pan for takoyaki and apply oil
- After hot, put the main ingredients into the hot pan and add the filling according to taste
- Put the toppings into the pan until evenly covered
- Cook until boiling, after boiling cover and let stand for 15 minutes on low heat
- After 15 minutes, let stand for a while until dry. When dry, serve
How to serve:
- Wait for Khanom Krok to dry
- Prepare a small plate
- Remove and serve on a small plate
- Thai Khanom Krok ready to be served
