The combination of cucumber, coconut milk sauce, and light spices makes this dish perfect for hot weather or as a side dish for lunch.<\/p>\n<p>Want to try making it at home?<br \/>\nCheck out this easy Kokor Timun recipe with MamaKoKo coconut milk below!<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 cucumbers<\/li>\n<li>2 red chillies<\/li>\n<li>2 clove of shallots<\/li>\n<li>Sugar to taste<\/li>\n<li>Salt to taste<\/li>\n<li>Seasoning to taste<\/li>\n<li>Shrimp paste to taste<\/li>\n<li>1 pcs MamaKoKo coconut milk<\/li>\n<li>Water as needed<\/li>\n<\/ul>\n<p>How to cook:<\/p>\n<ol>\n<li>Peel 2 cucumbers that have been cleaned<\/li>\n<li>Scoop out the seeds and slice the cucumbers lengthwise<\/li>\n<li>For the seasoning, saut\u00e9 2 red chilies and 2 cloves of shallot. Saut\u00e9 until fragrant and browned<\/li>\n<li>Pour the cooked mixture into a mortar, then add sugar, salt, seasoning, and shrimp paste to taste<\/li>\n<li>Pound until coarsely ground and adjust the flavor<\/li>\n<li>Once the seasoning is ready, place the cucumber slices in a bowl and add the coarsely ground seasoning<\/li>\n<li>Add 65ml of MamaKoKo coconut milk and a little water.
