Kolak Pisang
Ingredients:
- 2 ripe plantains
- 4 pcs MamaKoko coconut milk 65ml
- Palm sugar to taste
- 1 sweet potato (optional)
- Sugar palm fruit (optional)
- 3-4 pandan leaves
- Cold water (optional)
Instructions:
- (Optional) Prepare and boil your sugar palm fruit for approximately 15 minutes until it is soft and boil your diced (approximately 2 – 3 cm long) sweet potatoes for approximately 10 minutes or until it is tender.
- After they are cooked, strain them to remove excess water. To stop the cooking process, you can pour some cold water over them.
- Pour MamaKoKo coconut milk in the same pot and stir continuously.
- Add the sugar palm fruit that you have previously boiled to tender along with some palm sugar according to your taste and stir continuously until the sugar is dissolved.
- Add 3-4 pandan leaves.
- Peel the plantains before cutting them into a 2 – 3 cm long segments and add them into the pan along with those sweet potatoes (optional).
- Return to boil before turning off the stove and serve it.
