Green Curry Chicken

Ingredients:

Green curry paste
Boneless chicken (chest or thigh)
Eggplant (optional)
3 lime leaves
Chicken or vegetable stock; or water
4 packs MamaKoKo Coconut Milk 65ml
Fish sauce
Sugar
Salt
Lime juice.

Cooking Instructions:

  1. Saute green curry paste. Then after it smells good, add the chicken stock or vegetable stock.
  2. Once it starts to boil, add MamaKoKo’s instant coconut milk along with the chopped lime leaves.
  3. Once the lime leaves start to soften, add the chicken. Cook for 10 minutes until chicken is cooked.
  4. Add eggplant (optional) and wait until it boils.
  5. Stir several times and add fish sauce, salt, sugar, and lime juice to taste.
