Ingredients:
Green curry paste
Boneless chicken (chest or thigh)
Eggplant (optional)
3 lime leaves
Chicken or vegetable stock; or water
4 packs MamaKoKo Coconut Milk 65ml
Fish sauce
Sugar
Salt
Lime juice.
Cooking Instructions:
- Saute green curry paste. Then after it smells good, add the chicken stock or vegetable stock.
- Once it starts to boil, add MamaKoKo’s instant coconut milk along with the chopped lime leaves.
- Once the lime leaves start to soften, add the chicken. Cook for 10 minutes until chicken is cooked.
- Add eggplant (optional) and wait until it boils.
- Stir several times and add fish sauce, salt, sugar, and lime juice to taste.
