Ingredients:
- 2 cucumbers
- 2 red chillies
- 2 clove of shallots
- Sugar to taste
- Salt to taste
- Seasoning to taste
- Shrimp paste to taste
- 1 pcs MamaKoKo coconut milk
- Water as needed
How to cook:
- Peel 2 cucumbers that have been cleaned
- Scoop out the seeds and slice the cucumbers lengthwise
- For the seasoning, sauté 2 red chilies and 2 cloves of shallot. Sauté until fragrant and browned
- Pour the cooked mixture into a mortar, then add sugar, salt, seasoning, and shrimp paste to taste
- Pound until coarsely ground and adjust the flavor
- Once the seasoning is ready, place the cucumber slices in a bowl and add the coarsely ground seasoning
- Add 65ml of MamaKoKo coconut milk and a little water. Stir until well combined
- Banjar-style kokor cucumber is ready to serve
