Chicken Soup with Yellow Spices

Ingredients:

  • 1 free-range washed and cut chicken
  • 3 tbsp oil for frying
  • 15 pcs MamaKoKo coconut milk 65ml
  • 500 ml water
  • 3 bay leaves
  • 3 lime leaves
  • 2 lemongrass stalks, crushed
  • 1 segment of galangal finger, crushed
  • half tea spoon  sugar
  • 1 tea spoon instant chicken stock powder

Ground spices:

  • 10 cloves of red onion
  • 8 cloves of garlic
  • half table spoon white pepper
  • half table spoon coriander
  • half teaspoon cumin
  • half teaspoon nutmeg
  • 1 thumb turmeric
  • 1 thumb ginger
  • 50 grams of hazelnut
  • Salt 

Cooking Instruction:

  1. Blend the spices. Then, stir-fry together with galangal, lemongrass, lime leaves, and bay leaves. Saute until fragrant before adding the chicken. Cook chicken until done.
  2. Pour the water along with the sugar and instant chicken-flavored powdered broth. Cook over medium heat until the water reduces and stir for a few minutes.
  3. Add MamaKoKo instant coconut milk and cook until it boils and is cooked.
  4. Ready to serve.
