Chicken Soup with Yellow Spices
Ingredients:
- 1 free-range washed and cut chicken
- 3 tbsp oil for frying
- 15 pcs MamaKoKo coconut milk 65ml
- 500 ml water
- 3 bay leaves
- 3 lime leaves
- 2 lemongrass stalks, crushed
- 1 segment of galangal finger, crushed
- half tea spoon sugar
- 1 tea spoon instant chicken stock powder
Ground spices:
- 10 cloves of red onion
- 8 cloves of garlic
- half table spoon white pepper
- half table spoon coriander
- half teaspoon cumin
- half teaspoon nutmeg
- 1 thumb turmeric
- 1 thumb ginger
- 50 grams of hazelnut
- SaltÂ
Cooking Instruction:
- Blend the spices. Then, stir-fry together with galangal, lemongrass, lime leaves, and bay leaves. Saute until fragrant before adding the chicken. Cook chicken until done.
- Pour the water along with the sugar and instant chicken-flavored powdered broth. Cook over medium heat until the water reduces and stir for a few minutes.
- Add MamaKoKo instant coconut milk and cook until it boils and is cooked.
- Ready to serve.
