Chicken Laksa Noodles

Ingredients:

  • ¼ chicken
  • ¼ lemon / lime
  • 2 stalks of lemongrass
  • 4 bay leaves
  • 4 lime leaves
  • 1 segment of ginger
  • 1,5 liter water
  • 100 ml of UHT milk
  • 1 piece of coconut milk MamaKoko 65 ml
  • Frying oil
  • Sufficient sugar and salt

Powdered seasoning ingredients:

  • 5 shallots
  • 12 cloves of garlic
  • 5 segments of turmeric
  • 9 candlenuts

Complementary ingredients:

  • Oncom, fry then smash
  • Shredded chicken
  • Boiled eggs
  • Chips
  • Basil leave
  • Bean sprouts
  • Sambal
  • Sweet soy sauce
  • Lime
  • Cucumber pickle
  • Chili powder
  • Vermicelli, boiled then drained
  • Fried onions

How to make:

  1. Wash the chicken, rub it with lemon. Set aside for 15 minutes, rinse.
  2. Boil the chicken with 1.5 liters of water. Add bay leaves, lime leaves, ginger, and lemongrass. Cook over low heat until boiling.
  3. Saute ground spices with oil until fragrant. Put it in the pot with the chicken.
  4. Add sugar and salt
  5. Remove the chicken, fry then shred
  6. Add Mama Koko’s coconut milk and milk into the pot containing the laksa sauce. Stir well, cook until boiling. Turn off the fire.
  7. Arrange vermicelli, chicken, bean sprouts, basil, oncom, eggs in a bowl. Pour hot laksa sauce. Sprinkle chips and fried onions
  8. Add pickles, chili sauce, chili powder, sweet soy sauce and lime
