Ingredients:
- 2 mackerel tuna fish
- 5 pcs pieces of white tofu
- 1 pcs MamaKoKo coconut milk
- 700 ml water
- Chili peppers to taste
- 8 cloves of red onion
- 4 cloves of garlic
- 4 roasted candlenuts
- 2 finger-length pieces of turmeric
- 1 finger-length piece of ginger
- 3 bay leaves
- 3 lime leaves
- 2 lemongrass stalks
- 1 thumb-sized piece galangal
- 1/4 teaspoon ground coriander
- 1/2 teaspoon ground pepper
- 1/2 teaspoon salt
- 1/4 teaspoon seasoning
- 1/2 teaspoon chicken bouillon powder
How to cook:
- Cut 5 pieces of tofu into 2 parts, then heat the oil and fry the 2 parts of tofu until half cooked
- After that, clean 2 mackerel tuna fish by removing the head, guts, and bones. Then cut them into small pieces according to your preference
- After the fish is cut, it can be washed first, then fried until half cooked
- Grind the spices, such as 8 cloves of shallots, 4 cloves of garlic, 4 roasted candlenuts, 2 fingers of turmeric, and 1 finger of ginger using a chopper
- After grinding, sauté until the water evaporates, then add 3 bay leaves, 3 lime leaves, 1 thumb-sized piece of galangal, and 2 crushed lemongrass stalks. Cook again until done
- When cooked, add 700 ml of water, 1/4 teaspoon of ground coriander, 1/2 teaspoon of ground pepper, 1/2 teaspoon of salt, 1/4 teaspoon of seasoning, and 1/2 teaspoon of chicken bouillon powder. Then stir and cook until boiling
- After boiling, add the half-cooked fried tofu and cook again until boiling
- Add the boiled fish and stir again until evenly mixed
- Then add 1 piece of MamaKoKo coconut milk and stir until well blended.
- Cook while stirring until the coconut milk has reduced slightly. Then add a few chilies to taste and cook briefly until boiling.
- The coconut milk mackerel tuna stew is ready to serve.
Serving instructions:
- Transfer the mackerel tuna and tofu curry to a large bowl.
- Then prepare a plate of rice and add the mackerel tuna and tofu curry.
