Curry Tofu

ingredient:

  • 4 Medium size fried tofu
  • 3 tamarind kandis
  • 2 bay leaves
  • 3 pieces of lime leaves
  • 2 sticks of crushed lemongrass
  • 3cm galangal crushed
  • 650ml water
  • 1 pack of MamaKoko coconut milk
  • 1 tsp salt
  • ½ tsp broth powder
  • oil for frying

Sauce Ingredients:

  • 7 pcs MamaKoKo
  • Coconut Milk 65 ml
  • 40 grams of rice flour
  • 1 tbsp sugar
  • 1/2 tsp salt

Ground spices:

  • 5 red onions
  • 4 cloves garlic
  • ¼ tsp cumin
  • 3cm turmeric
  • 3cm ginger
  • 1 tbsp coriander
  • 15 red curly chilies

How to make :

  • Heat the pan with a little oil. Sauté ground spices, bay leaves, lime leaves, lemongrass, and galangal stir until fragrant
  • Pour in water, add kandis acid and add salt and broth powder, stir until smooth.
  • Add the MamaKoko coconut milk, stir gently so the coconut milk doesn’t break
  • Enter the fried tofu, cook until the sauce shrinks and thickens
  • Remove and serve with a sprinkling of fried onions on top
