ingredient:
- 4 Medium size fried tofu
- 3 tamarind kandis
- 2 bay leaves
- 3 pieces of lime leaves
- 2 sticks of crushed lemongrass
- 3cm galangal crushed
- 650ml water
- 1 pack of MamaKoko coconut milk
- 1 tsp salt
- ½ tsp broth powder
- oil for frying
Sauce Ingredients:
- 7 pcs MamaKoKo
- Coconut Milk 65 ml
- 40 grams of rice flour
- 1 tbsp sugar
- 1/2 tsp salt
Ground spices:
- 5 red onions
- 4 cloves garlic
- ¼ tsp cumin
- 3cm turmeric
- 3cm ginger
- 1 tbsp coriander
- 15 red curly chilies
How to make :
- Heat the pan with a little oil. Sauté ground spices, bay leaves, lime leaves, lemongrass, and galangal stir until fragrant
- Pour in water, add kandis acid and add salt and broth powder, stir until smooth.
- Add the MamaKoko coconut milk, stir gently so the coconut milk doesn’t break
- Enter the fried tofu, cook until the sauce shrinks and thickens
- Remove and serve with a sprinkling of fried onions on top
